How to Mash Cauliflower

Mashed potatoes are so last season... Step aside and make room for the next big star: Mashed Cauliflower!!! Whatever dish it may be, cauliflower has taken the spotlight!

To make mashed cauliflower, fill a pot with water and add cauliflower florets with a pinch of salt. Bring to a boil, let cook (approx. 5 minutes) and strain. Be sure to strain the cauliflower very well to ensure that the mixture will not be too liquid. Once the cauliflower is well strained, add to a food processor and blend until desired consistency is achieved. Voila!

To add some extra flavor, don't be shy to mix it up with your favorite spices!
