We've Put A New Twist on Zucchini Noodles in This Zucchini Tomato Pesto Salad

Salads can get boring after a while, so mixing them up in new ways is always a good idea. In this one, we take the classics of zucchini and tomato, but toss in some zesty pesto to kick things up a notch. Crunchy, juicy, and fresh, this salad bowl brings life back to eating healthy with a fantastic new taste. INGREDIENTS

4 Medium Zucchini, (2 Pounds)
24 Grape Tomatoes, or cherry tomatoes, halved
1 Tbsp Parmesan, grated, (optional)
Fresh basil leaves, to garnish
salt and black pepper, to taste
3 Tbsp Basil Pesto

DIRECTIONS

1 Zuchinni noodles

Put four zucchinis through a spiral slicer.
2 Pesto added to zucchini

Place the zucchini ribbons in a bowl and add pesto. Toss the two ingredients gently together.
3 Tomatoes added to zucchini noodles

Add tomatoes to the mixture.
4 Parmesan added to salad

If desired, garnish with grated Parmesan and season with salt and pepper. Top with fresh basil leaves.
