Zucchini pasta is a guaranteed hit when it comes to cutting the carbs!
If you’ve had trouble letting go of pasta, don’t worry! This is a great zucchini pasta recipe that will leave you wondering why you ever thought you’d miss the traditional noodles. When you’re looking for healthier options, nothing beats zucchini pasta for taste and satisfaction.
7 Oz Ground turkey
1/4 Egg white
1/2 Cup Tomato coulis
1/4 Tsp Grape seed oil
1/2 Cup Green onions, diced
1 Garlic clove, minced
1 Cup Zucchini, sliced with a potato peeler
1 Pinch Red pepper powder
Mix your ground turkey with an egg white in a medium-sized bowl until you've reached a smooth consistency.
Use a tablespoon to form your mixture into small balls, and keep a small bowl of water close by so you can keep the mixture from sticking to your fingers. This'll help you form perfect balls every time.
Heat up a non-stick pan with grape seed oil and add your meatballs, allowing them to sear. Once they're cooked, reduce the pan's heat to medium while you add tomato coulis
, before bringing the pan to a boil.
Once it's boiled, add your finely sliced noodles to the pan, letting them cook. Use a potato peeler to get the right cut, or julienne
the zucchini by hand or with a mandolin.
Finally, add chopped green onions to the pan and top with red pepper powder before you plate.
Did you know?
Turkey is a delicious source of protein, and keeping it low-fat is pretty easy – just stick to the white meat! Did you know that turkey can also help regulate insulin levels, and that the same amino acid in turkey that makes you sleepy – tryptophan – produces serotonin and is necessary for strengthening the immune system? Keep that in mind next time you feel your eyelids drooping after Thanksgiving dinner!
