INGREDIENTS

1 Tbsp Grape seed oil
6 Oz Shrimp, peeled and deveined
2 Garlic clove, minced
1/4 Tsp Red pepper flakes
2 Tbsp Chicken stock
1 Tbsp Fresh lemon juice
2 Cup Zucchini, spiralized
2 Tbsp Fresh parsley, chopped
Sea salt & pepper, to taste

DIRECTIONS

Heat oil in a large skillet over medium high heat. Add the peeled and deveined shrimp, garlic, and red pepper flakes, cooking until pink (about 2-3 minutes).

Stir in the chicken stock and lemon juice; season with salt and pepper to taste.

Bring the pan to a simmer and stir in zucchini noodles. Mix all ingredients until they're well-combined, or about 1 to 2 minutes.

Plate your noodles first, topping them with the cooked shrimp. Garnish the plate with fresh parsley.
