INGREDIENTS

3 Zucchini, Spiralized
1/4 Cup feta cheese
1/4 Cup White onion, Chopped
Bunch enokitake mushrooms
1 Tsp Garlic powder
12 Tbsp sour cream, Reduced Fat
salt and black pepper, To taste

DIRECTIONS

Preheat your oven to 350°F. Spiralize the three zucchinis into noodles.

Create four nests out of the zucchini noodles and place them on a bake sheet lined with parchment paper. Sprinkle garlic powder over nests. Make sure to leave the middle of each nest open for the feta cheese, mushroom, and onion.

Bake for 20 minutes then broil for an additional 5 minutes until the top of the noodles are lightly browned.

When ready, take the baking sheet out of the oven and top it with a scoop of reduce fat sour cream.
