Our low-carb, Pomodoro-style fish with basil-rich tomato sauce is the perfect dinnertime recipe

Pomodoro sauce is a basil-rich tomato sauce with just enough zest to make it so versatile that you can use it in a variety of dishes from fish to chicken or beef. INGREDIENTS

16 Oz skinless cod fillets, (2 fillets)
1 Tbsp Olive oil
2 Garlic cloves, minced
1 Tbsp Onion powder
1/2 Tsp Sugar substitute
14 1/2 Oz Canned crushed tomatoes
1 Zucchini, spiralized
1/4 Cups Fresh basil, roughly chopped
Sea salt & pepper, to taste

DIRECTIONS

1 - Skillet with oil

In a large skillet, add ½ of the oil and heat over medium. Throw in the cod fillets and cook thoroughly until tender then shred with a fork and set fish aside.

In the same pan, add the rest of the oil and garlic then sauté for approximately 1 minute or until fragrant and soft. Add in zucchini noodles and cook until you get your desired texture. We recommend 2-5 minutes.
3 - Saute and mix ingredients

Add sugar substitute and onion powder and coat the noodles then add the crushed tomatoes and stir. Keep stiring then simmer for approximately 5 minutes. Add salt and pepper to taste.
4 - Add white fish

Once noodles are evenly coated, add in shredded fish and stir. Let simmer for approximately 5 minutes.
5 - Add toppings

Garnish with fresh basil.
6 - Serve on plate
