White Fish with Tomato Sauce and Zucchini Noodles

We’ve got another Italian-influenced recipe for you! Pomodoro sauce is a basil-rich tomato sauce with just enough zest to make it so versatile that you can use it in a variety of dishes from fish to chicken or beef. Our White Fish with Tomato Sauce and Zucchini Noodles is paleo-friendly, low-carb, and gluten-free making it the perfect dish for a mid-week meal that is easy to make and not too heavy. In a large skillet, add ½ of the oil and heat over medium. Throw in the cod fillets and cook thoroughly until tender then shred with a fork and set fish aside.
In the same pan, add the rest of the oil and garlic then sauté for approximately 1 minute or until fragrant and soft. Add in zucchini noodles and cook until you get your desired texture. We recommend 2-5 minutes.
Add sugar substitute and onion powder and coat the noodles then add the crushed tomatoes and stir. Keep stiring then simmer for approximately 5 minutes. Add salt and pepper to taste.
Once noodles are evenly coated, add in shredded fish and stir. Let simmer for approximately 5 minutes.
Garnish with fresh basil.
