INGREDIENTS

1/2 Cup Cauliflower, Riced
2 Tsp Grape seed oil
1 Garlic clove, Diced
3/4 Cup Kale, leaves removed from the stalk and torn into bite sized pieces
3/4 Cup Baby spinach
4 Oz Tofu, Sliced
Lemon, Wedge
1 Egg

DIRECTIONS

Rice the cauliflower in a blender, using a pulse setting to get the right consistency.

To make the rice, pulse cauliflower in a blender until fine.
Hard- or soft-boil an egg for use in this Warm Breakfast Bowl, depending on your preference.

In a small pot, boil an egg for about 3-5 minutes then transfer to a plate to let cool. Remove the shell once cooled.
Cook riced cauliflower with spinach, kale, and garlic.

In a large pan, heat grape see oil over medium and add garlic, cooking for about 1 minute or until fragrant. Add cauliflower rice and season with sea salt cooking for 5-6 minutes. Add spinach and kale and cook until wilted then remove from pan.

In the same pan, cook tofu until golden brown then add peeled boiled egg and sear on each side.
