7 Oz Turkey, breast
1/2 Cup Mixed bell peppers, diced
1/2 Cup Tomatoes, diced
1 Cup Zucchini, diced
2 Tbsp Honey dijon dressing, low fat, low carb
1 Garlic clove, thinly sliced

step #1

Wrap your  turkey cutlet in saran wrap, lay it on a flat surface, and flatten it with the back of a pan.

step #2

Add the cutlet to a hot non-stick pan, making sure to season it with sea salt and pepper. Let it cook gently on both sides, picking up just enough color so that it's not completely raw, and set it aside on a plate.

step #3

In the same pan, add peppers, and zucchini, seasoning with sea salt and pepper. Let the veggies cook.

step #4

Next, stir in the sliced garlic and add the diced (or brunoise) tomatoes. The tomatoes will reintroduce some liquid to the pan, which is perfect for this delicious dressing.

step #5

Add in your low-fat, low-carb honey Dijon dressing and place the turkey cutlet back in the pan. Put a lid on it, reduce the heat to medium, and let the turkey cook until it is done.

step #6

Ready to serve!
