1 collard green leaf
1 Canned tuna in water, Drained
1 Tbsp Greek yogurt, nonfat
1 Tsp Light Mayonnaise
1/4 Cup Celery, Diced
1/2 Fresh lemon juice
1 Carrots, Shredded

To prep the wrap, remove the hard lower portion of the collard green. Place the leaf into a large pot of boiling water for about 15 seconds. After 15 seconds, remove the leaf, pat dry, and set aside.

In a medium sized bowl, add tuna, nonfat greek yogurt, light mayonnaise, celery, and lime juice and zest; mix all ingredients together until combined.

Lay collard green out on a flat surface and add shredded carrots to the middle, followed by the tuna mixture.

Like a burrito, place the wrap horizontally and fold in both the left and right corner of the leaf over the filling.

Starting at the end closest to you and roll up to make your wrap. Cut in half!
