Parsley is a great source of folic acid! Folic acid plays an important role in cardiovascular health, as it is necessary during the process in which, the body converts the molecule homocysteine into benign molecules. High levels of homocysteine, can damage blood vessels. Also, it can increase the risk of a heart attack and stroke in people with atherosclerosis or diabetic heart disease. Food that is rich in folic acid can help prevent these diseases.
