7 Oz Chicken, finely sliced
1 Cup Brussels sprouts, blanched & halved
1 Cup Baby spinach, chopped
1 Garlic clove, minced
2 Fresh thyme
1 Tbsp Tomato coulis
3 Tbsp Apple cider vinegar
1/4 Tsp Grape seed oil
Heat up a non-stick pan with grape seed oil, then add your finely sliced chicken and minced garlic, allowing everything to cook for around 2 minutes.
Add a sprig of fresh thyme
- feel free to adjust how much you include to your individual taste, though!
When the chicken is nearly fully cooked, add in your chopped baby spinach and blanched Brussels sprouts
. Once the spinach is fully cooked, remove everything from the pan and set aside on a plate.
In the same pan, pour in the apple cider vinegar, letting it deglaze the pan. This will lift the juices and flavors that have been cooked onto the pan out and let them incorporate in your sauce. Allow the liquid to reduce by half.
Next, add your tomato coulis
and mix thoroughly. Once you've got an even consistency, it'll be ready to drizzle over your plated chicken.
