Try our vibrant Red Summer Salad that is heart healthy!
Summer is the best time to make a salad because you can find fresh vegetables not only from the grocery store but you can grow them in your garden or visit the farmers market! Our delicious Red Summer Salad recipe is vegetarian, gluten-free and healthy for your heart. The perfect combination of cranberries, red cabbage, and eggplant make this dish irresistible! Try this dish for lunch or prepare it as a side dish!
2 Tbsp Grape seed oil
1 Half Onion, Thinly sliced
1 Half Red cabbage, Shredded
300 ml Apple juice, Good quality
300 g Cranberries, Fresh or frozen
Half Eggplant, Cut into small chunks
salt and black pepper, To taste
In a large pan that comes with a lid, heat the oil. Add the onion and then the eggplant and cook them for 10 minutes until they have softened.
Add in the red cabbage and stir it for 10 minutes. Pour in the apple juice and season with salt and pepper to taste. Cover the pan with the lid. Let the mixture simmer for 45 minutes and stir occasionally. The red cabbage should be tender and most of the liquid gone.
Slightly turn up the heat and add the cranberries. Cook for approximately 5 minutes until they burst. Season with salt and pepper to taste.
