A delicious and healthy stuffed bell pepper recipe!

Low carb stuffed bell peppers are a favorite of ours because they can be enjoyed for almost any meal. In this recipe, we stuff our bell peppers with shrimp, vegetables and a succulent saffron dressing to create a mouth-watering easy and healthy bell pepper recipe!

INGREDIENTS

7 Oz Shrimp, cooked and chopped
1 Cup Vegetable stew, (ratatouille style)
1 Bell pepper
4 Tbsp White onion, chopped
2 Tbsp Saffron dressing

Begin by cutting your bell pepper to remove the bottom so that it is flat and remove the top of the pepper.

Peel and cut the onions, setting them aside in a small bowl.

Cut your cooked shrimp and add it to the bowl with the onions.

Add vegetable stew to the bowl with saffron dressing on top.

Mix all of the ingredients well, then add sea salt and pepper to taste.

Stuff the bell pepper with the ingredients from the small bowl.
