INGREDIENTS

7 Oz Ham, julienned
2 Cup Spinach, frozen
1 Cup Chicken stock
1 Cup Vegetable stock
1/4 Cup Cauliflower, blanched & mashed

Add the frozen spinach, chicken stock, and vegetable stock to a hot non-stick pan.

Let cook for 2 minutes, keeping it on a very low simmer.

Remove from heat and add the spinach and stock into a blender, blending well.

Add approximately ¼ cup of mashed cauliflower into the blender and blend well.

Add sea salt and pepper to taste, shake to mix.

Pour the soup into a bowl, and top with julienned ham.
