Pour grape seed oil into a hot, non-stick pan before adding peeled and deveined shrimp. Let it sear, flipping halfway to cook both sides. Shrimp doesn't take long to cook, but getting it to that perfect level of tenderness means you'll want to keep a close eye on it.
Once you've seared your shrimp, add red pepper flakes. They'll cook quickly, and you just want to release some of that flavor for the shrimp to pick up.
Squeeze or pour in the lemon juice and delgaze the pan to add further flavor. Deglazing lifts off juices that get cooked onto the pan and allows you to pack a ton of flavor into a meal.
Finally, add tomatoes, garlic, and zucchini noodles. Allow these to cook until the noodles loosen up (just like traditional pasta noodles) and the tomatoes have gently seared, and get ready to plate!
Ready to serve!
Did you know?
Pasta can make for a really filling meal, but eating too much of the stuff is a sure way to pack on unwanted pounds. Zucchini, meanwhile, is a low-calorie veggie that really sates appetites. Knowing you can make noodles out of zucchini makes it a no-brainer replacement for high-carb pasta! Zucchini is also a great source of vitamin C and beta carotene, which help prevent the oxidization of cholesterol on blood vessel walls, contributing to greater cardiovascular health. So swap the noodles for “zoodles” and embrace a healthier diet!
