These fritters pack a spicy kick you're going to love!

In case you hadn’t noticed, we’re big fans of cauliflower here at Low Fat Low Carb. It’s such a versatile vegetable, as this recipe shows: easy-to-make fritters with cauliflower rice and kale! We’ve added just the right amount of heat from some freshly ground black pepper and red pepper flakes, and serving it with a side of hot sauce is a must. INGREDIENTS

1 Cup Kale, Finely chopped
1/2 Cauliflower, Riced, steamed and well drained
2 Tsp Grape seed oil
1 Garlic clove, Minced
1 Egg
1/4 Sea salt
Pepper, To taste
Red pepper flakes, To taste

DIRECTIONS

Step 1 - Heat 1 teaspoon of grape seed oil over medium heat in skillet

In a large skillet, add 1 tsp of grapeseed oil and heat over medium.
Step 2 - Add kale and garlic, and sauté until it wilts

Satué garlic and kale in skillet for approximately 2-3 minutes or until kale is wilted, then remove from heat.
Step 3 - In a bowl, combine the cauliflower, kale, egg, salt, pepper, and red pepper flakes.

In a separate large bowl, add kale, cauliflower, egg, red pepper flakes, salt, and pepper and mix together until ingredients are thoroughly combined. We your hands and form mixture into 4 small patties. The patties should be ½ an inch thick.
Step 4 - Add the fritters to a hot skillet with half a teaspoon of oil and press them with a spatula

In the same skillet, add the remainder of grapeseed oil and heat over medium. Add fritters to pan and gently press down with a spatula. Once both sides are golden brown, serve on plate and garnish with fresh chives and a side of hot sauce.
