INGREDIENTS

1 Large red pepper, roasted
1/4 Cup Chicken stock
1 Garlic clove, minced
1/2 Jalapeno pepper, chopped (seeds removed)
1/2 Tsp Italian seasoning
1/4 Tsp Grape seed oil
7 Oz Chicken, cubed
1 Cup Asparagus, blanched & chopped

DIRECTIONS

step #1

Before you do anything else, set your oven to broil and let it preheat. This'll save you from waiting around later on.

step #2

Put your whole red pepper on a baking sheet, and set it in the oven. You want to roast it just a little bit, so check on it and pull it out when the skin turns a little black.

step #3

Pull the skin off your roasted pepper and remove the seeds and pith from the inside. Place it in a blender along with chicken broth, garlic, a jalapeño pepper, and Italian seasoning. Blend until you've got a sauce-like consistency - you've just made a coulis

step #4

Heat up a non-stick pan with grape seed oil, and add your cubed chicken. Let it cook, and when it is nearly finished, add your blanched asparagus and coulis, bringing them to heat. Once the chicken's cooked, you're ready to plate.

step #5

Optionally, you can roast a second red pepper while you prepare the chicken, which makes for a perfect addition on top of your spicy chicken when it's time to plate.

step #6

Ready to serve!

Did you know?

In addition to their vitamin C content and the heat-generating component capsaicin (both of which have fantastic health benefits), hot chili peppers such as jalapeños frequently have a good amount of copper present. Copper is often lacking in Western diets, and is a vital antioxidant for healthy neurons and strong bones. Copper also helps the body absorb more iron, and has been known to help support white blood cell levels.
