Spicy Chicken & Red Bell Peppers Coulis

While the heat might not be for everyone, there’s nothing quite like spicy chicken recipes for that extra little kick of flavor. This easy and nutritious recipe brings the heat without packing on the carbs, and best of all, it takes next to no time to make. Before you do anything else, set your oven to broil and let it preheat. This'll save you from waiting around later on.
Put your whole red pepper on a baking sheet, and set it in the oven. You want to roast it just a little bit, so check on it and pull it out when the skin turns a little black.
Pull the skin off your roasted pepper and remove the seeds and pith from the inside. Place it in a blender along with chicken broth, garlic, a jalapeño pepper, and Italian seasoning. Blend until you've got a sauce-like consistency - you've just made a coulis.
Heat up a non-stick pan with grape seed oil, and add your cubed chicken. Let it cook, and when it is nearly finished, add your blanched asparagus and coulis, bringing them to heat. Once the chicken's cooked, you're ready to plate.
Optionally, you can roast a second red pepper while you prepare the chicken, which makes for a perfect addition on top of your spicy chicken when it's time to plate.
