Indulge in this light and refreshing Sparkling Lemon Grapefruit Jello, the perfect summer snack!
Summer is upon us and that means patio season is here! This citrus-flavored jello is the perfect light dessert or snack for sitting in the sun. You can pack our Sparkling Lemon Grapefruit Jello in a picnic basket and bring it to the beach, but don’t forget to bring extra, this is a recipe you’ll want to share!
2 Cups Grapefruit Juice, freshly squeezed (about 3 medium grapefruits), strained to remove any pulp
1 Cup Fresh lemon juice, Squeezed
2 packet unflavored gelatin, about 4 1/2 teaspoons
1 Cup Sparkling Lemon water
2 Tbsp Honey
Pour 1 cup of grapefruit juice and 1 cup of lemon juice together in a bowl.
Pour the gelatin onto the juice, letting it sit for 5 minutes before stirring it in.
Pour the leftover grapefruit juice into a small saucepan, add honey, and bring to a low simmer. Stir until the honey has dissolved fully.
Pour the hot juice with honey into the gelatin bowl, whisking and mixing well for an even consistency.
Next, pour in the sparkling lemon water, whisking until the mixture is smooth and fully combined.
Divide the mixture into separate jars and refrigerate for 4 hours, or until the jello is set.
Ready to serve!
