INGREDIENTS

8 Oz Chicken breast
1/2 Cup Tomato, Chopped
1 Garlic clove, Minced
1 Tbsp Olive oil
1 Tsp Apple cider vinegar
Handfuls Basil, Chopped
1/8 Tsp Sea salt

DIRECTIONS

Preheat oven to 375°F. Season your chicken with salt and pepper before baking for 35 to 40 minutes, or until done.

While the chicken is cooking, mix chopped tomatoes, garlic, olive oil, vinegar, sea salt, and basil in a bowl. Refrigerate until chicken is cooked.

When it’s time to serve, spoon your bruschetta over the chicken, and serve with a mixed green salad.
