Taco salad doesn’t need to be on your naughty list with this healthy variation.  Enjoy the richness of yogurt dressing, shrimp and black beans in this recipe that does not disappoint.

INGREDIENTS

2 avocado, cubed
12 Shrimp, small, cooked and cut in halves
1 Cup Black Beans, rinsed
2 Cup Baby spinach
1 Cup Cherry tomatoes, cut in half
1 Red bell pepper, coarsely chopped
1/2 English Cucumbers, cubed
1/2 Cup Cilantro, chopped

Dressing

1/2 Cup Greek yogurt, plain non-fat
2 Tsp Apple cider vinegar
1 Garlic clove, minced
1/2 Tsp Sea salt
Black pepper, to taste
