1 1/4 Pounds large shrimp, peeled and deveined (about 21-25 count)
1 Tbsp Extra virgin olive oil
2 Tbsp Garlic, finely chopped
1 1/2 Cups Chicken Broth
1/2 Lemon, juice only
1 Tsp Italian seasoning
1 Tbsp Parsley
2 Cups cauliflower rice
10 Oz Brussels sprouts, shredded
salt and black pepper, to taste
