INGREDIENTS

3 Eggs
2 Cup Vegetables or salad of choice, (green preferably)
1 Cup Shrimp, cut in two
1/2 Cup Vegetable coulis
2 Tbsp Basil dressing
1/4 Tsp Grape seed oil

Before you begin, prepare the Basil Dressing and Vegetable Coulis

Start by cooking the eggs in a hot non-stick pan. You can make small cuts in the eggs to assure that they are well cooked.

Let the eggs cook for a few minutes, then remove the eggs and place them on your plate.

Cook the shrimp in your hot pan, searing on high heat. Be sure to flip halfway to get an even sear.

Pour the vegetable coulis on top of the cooked shrimp.

Ready to serve!
