We all love burritos, tacos, wraps, and fajitas, but when you’re sticking to your low-fat, low-carb plan, it can be a challenge to let go of these familiar comfort foods. Good thing this low-carb comfort food makes it easy to stick to your diet!

INGREDIENTS

1 Chicken breast, Sliced (boneless, skinless breast)
1 Tbsp Lime juice
1 Tsp Sea salt
2 Tsp Chili powder
1 Tsp Garlic powder
1/2 Tsp Paprika
1 Tsp Ground cumin
1/4 Tsp Coriander
1/4 Tsp Pepper
1 Tsp Grape seed oil
2 Bell pepper, Mixed colors

DIRECTIONS

Step 1: Add condiments and chicken to sealable bag, and marinate.

Add lime juice, ½ tsp salt, ¼ tsp cumin, ¼ tsp chili powder, and sliced chicken to a large resealable bag. Shake to coat chicken in seasonings then marinate in fridge for 6-8 hours.

Preheat oven to 450°F when ready to cook. Strain marinade from chicken strips then toss with peppers, grape seed oil, and remaining spices in a large bowl.

Spread out chicken and veggies on a baking tray and bake at 450°F for 10 minutes. Broil for an additional 5-7 minutes or until chicken is cooked through and peppers start to blacken.

Serve fajita mix onto lettuce wraps and garnish with favorite toppings.
