We all love burritos, tacos, wraps, and fajitas, but when you’re sticking to your low-fat, low-carb plan, it can be a challenge to let go of these familiar comfort foods. Good thing this low-carb comfort food makes it easy to stick to your diet!

INGREDIENTS

1 Chicken breast, Sliced (boneless, skinless breast)
1 Tbsp Lime juice
1 Tsp Sea salt
2 Tsp Chili powder
1 Tsp Garlic powder
1/2 Tsp Paprika
1 Tsp Ground cumin
1/4 Tsp Coriander
1/4 Tsp Pepper
1 Tsp Grape seed oil
2 Bell pepper, Mixed colors

DIRECTIONS

Step 1: Add condiments and chicken to sealable bag, and marinate.

In a large sealable bag, add lime juice, 1/2 teaspoon salt, 1/4 teaspoon chili powder, and a 1/4 teaspoon cumin. Add sliced chicken, and shake to mix evenly. Place in the fridge for 6 to 8 hours to marinate.

When you’re ready to cook, preheat your oven to 450°F. Remove your chicken from the fridge, strain out the marinade, and toss the chicken with peppers, grapeseed oil, and your remaining spices.

Spread your mixture out on a sheet pan. Bake for 10 minutes at 450°F, then set your oven to broil and cook for 5 to 7 minutes more, or until the peppers begin to blacken and the chicken is cooked through.

To serve, scoop fajita mixture into a lettuce wrap and top with your favorite toppings.
