This seafood fricassée with lime and vanilla is sure to surprise you!

Fantastic flavors come together in an amazing way in this easy-to-make seafood fricassée with vanilla and lime. It’ll take no time at all for your taste buds to experience this great seafood fricassée with lime that blends sweet and savory, all with the unique textures of scallops and shrimp.


3 1/2 Oz Shrimp, with skin
3 1/2 Oz Scallops
2 Cup Vegetables of choice, (green preferably), steamed
1 Vanilla bean, cut in two
1 Tbsp Lime juice
1 Tbsp Chives, chopped
1 Tsp Lime zest
1/4 Tsp Grape seed oil

Preheat a non-stick pan with grape seed oil while you prepare your ingredients. Use a paper towel to remove excess water from your scallops, as they'll cook best when they're dry.

Finely chop your chives and set aside for use as you finish the recipe and cut a vanilla bean down the middle.

Place your scallops in the pan and allow them to simmer for two minutes.

Flip your scallops at the two minute mark and add your shrimp - leaving the skin on the shrimp will protect the meat and give you a visual indication of when they're done.

Add the vanilla bean to the pan. You can also scrape some of bean into the pan for extra flavor.

Add lime zest and juice into the pan and stir gently.

Finish with your chopped chives. By this point, the shrimp and scallops should be perfectly cooked. At this point, you can add salt and pepper to taste, or leave the meal as is.
