INGREDIENTS

2 Lemons
3 Tbsp Garlic, finely minced
3 Tbsp Rosemary, finely chopped
3 Tbsp Oregano
1/2 Cup Extra virgin olive oil
1 1/4 Lb boneless lamb, preferably leg, cut into 1-inch cubes
Feta, crumbled, for garnishing (optional)

DIRECTIONS

Whisk together garlic, oregano, rosemary, and oil in a medium bowl. Juice and zest your lemons, you should yield approximately 6 tbsp juice and 2 tbsp zest. Add juice and zest to bowl and combine.

Using a resealable freezer bag, add lamb and pour mixture over top. Massage the marinade into the lamb until evenly coated. Ensure there is no air in the bag when you seal it. Cool in fridge for 8 hours or overnight.
