Switch things up with roasted radishes for a healthier option!



2 Cup Radishes, halved
1 Tsp Olive oil, (1 to 2 tsp)
2 Tbsp Fresh parsley, chopped

Preheat oven at 400°F

Begin by trimming the radishes and then cut them into halves.

In a medium sized bowl, toss together radishes, olive oil, parsley, sea salt & pepper.

Place radishes on a roasting pan in a single layer and roast until tender and crispy (approximately 45 minutes).

Toss radishes at the half way mark to ensure they are cooked evenly.
