INGREDIENTS

4 Chicken breast, boneless, 6-8 oz each
2 Tbsp Grape seed oil
1 Tsp Smoked paprika
1 Tsp Fresh thyme
2 Cups Bell pepper, Cut into large pieces
2 Cups Zucchini, Cut into large pieces
1 Cup Asparagus, Chopped
Sea salt & pepper, to taste

DIRECTIONS

Preheat oven to 400°F. Brush a large sheet pan with oil.

Place chicken on the pan and brush with oil. Season with smoked paprika, thyme, salt and pepper.

Place pan in oven and roast chicken for 15 to 20 minutes, depending on thickness.

While the chicken cooks, prep the veggies. Combine them all in a large bowl and toss with the remaining oil, paprika, thyme, salt and pepper.

Remove chicken from oven and add vegetables to the pan.

Place back in oven and cook 10-15 minutes longer.
