INGREDIENTS

4 Chicken breast, boneless, 6-8 oz each
2 Tbsp Grape seed oil
1 Tsp Smoked paprika
1 Tsp Fresh thyme
2 Cups Bell pepper, Cut into large pieces
2 Cups Zucchini, Cut into large pieces
1 Cup Asparagus, Chopped
Sea salt & pepper, to taste

DIRECTIONS

Start by preheating your oven to 400°F then line your pan with parchment paper.

Spread out chicken on pan then brush with oil and season with thyme, paprika, salt, and pepper.

Roast chicken in oven for 15-20 minutes depending on the size of the chicken breasts.

As the chicken is roasting, prep the vegetables. In a large bowl, toss veggies with oil, thyme, paprika, salt, and pepper.
