Rachel’s Mexican Chicken & Zucchini Recipe

If you’re looking for a healthier, but still tasty, option for dinner, then chicken zucchini recipes are the way to go. Chicken’s a great way to get the protein you need to keep going, while zucchini packs in nutrients for a satisfying veggie partner. Start by heating a non-stick pan with grape seed oil and adding minced garlic and cubed chicken. Let this cook and allow the garlic to work into the chicken.
Next, mix in the diced peppers and sliced zucchini. These won't take long to cook, so time it so that they're finishing as the chicken is almost fully cooked.
Sprinkle in half a teaspoon of powdered cumin and mix in two big tablespoons of fresh salsa. Stir everything together, and let the chicken finish cooking before plating.
When plating, top the meal with fresh cilantro to taste.
