Fast, simple, and healthy leek soup!

This is one of our favorite duck soup recipes since it’s so easy to cook but still gives you a delicious and healthy meal! This recipe is only made for 1 serving, but you can easily double or triple the ingredients depending on the amount of people at the dinner table. Give this low-carb leek soup recipe a go for dinner tonight!

INGREDIENTS

7 Oz Duck, sautéed and thinly sliced
2 Cup Leeks, thinly sliced
2 Cup Chicken stock
1/4 Tsp Grape seed oil

DIRECTIONS

Start by heating up a non-stick pan. Once it's hot, add your leeks.

Make sure not to overcook the leeks to the point that they color. You want them to reduce and become soft.

Add a pinch of salt and fresh pepper, then add the duck.

Quickly add the broth and allow it to cook for 2-3 minutes.

Ready to serve!
