INGREDIENTS

7 Oz Chicken, sliced
1 Cup Tomato
1 Cup Bell pepper, sliced
1/4 Cup Vegetable coulis
1 Bunch Fresh tarragon
1/4 Tsp Grape seed oil
1 Pinch Cayenne pepper, (optional)

DIRECTIONS

Heat up a non-stick pan with grape seed oil and add your sliced chicken, making sure to season with sea salt and cayenne pepper to add just a bit of heat to the dish. Let the chicken sear and pick up flavor.

Next, add the sliced bell peppers and vegetable coulis, allowing everything to cook for a few minutes.

Add the tomatoes at the end, and they'll add extra liquid to contribute to this dish's sauce, and finish with a few small bunches of tarragon for added flavor.

Alternatively, you can leave the vegetable coulis out until plating, serving the fricassee on top of the cold sauce for a unique taste combination.
