7 Oz Chicken, sliced
1 Cup Tomato
1 Cup Bell pepper, sliced
1/4 Cup Vegetable coulis
1 Bunch Fresh tarragon
1/4 Tsp Grape seed oil
1 Pinch Cayenne pepper, (optional)

step #1

Heat up a non-stick pan with grape seed oil and add your sliced chicken, making sure to season with sea salt and cayenne pepper to add just a bit of heat to the dish. Let the chicken sear and pick up flavor.

step #2

Next, add the sliced bell peppers and vegetable coulis, allowing everything to cook for a few minutes.

step #3

Add the tomatoes at the end, and they'll add extra liquid to contribute to this dish's sauce, and finish with a few small bunches of tarragon for added flavor.

step #4

Alternatively, you can leave the vegetable coulis out until plating, serving the fricassee on top of the cold sauce for a unique taste combination.

step #5

Ready to serve!

Did you know?

Essential oil from tarragon has been used to great effect as a treatment for rheumatism and arthritis. Tarragon helps improve the circulation of blood and lymph, and has detoxifying properties that make it great for preventing the build of acids that contribute to these ailments. In addition, tarragon helps prevent the growth of microbes on skin surfaces – not bad for such a simple spice.
