INGREDIENTS

1 Large Portobello mushroom, whole
1/4 Tsp Grape seed oil
7 Oz Chicken, diced
1/2 Cup Mixed bell peppers, diced
1 Garlic clove, minced
1/2 Cup Tomatoes, chopped
1 Tsp Parsley, chopped
1 Tsp Basil, chopped
1/2 Cup Tomato coulis

Before you begin, you'll want to prepare a coulis, so check out this video for our favorite tomato coulis recipe!

To start making your delicious portobello mushroom pizza, preheat your oven to 375°F.

Place your portobello mushroom on a baking sheet and place it in the oven for approximately 10 - 12 minutes.

While your portobello mushroom is in the oven, take your non-stick pan and place it over medium heat. Add your grape seed oil and your chicken, and cook it until the chicken is well seared.

Once the chicken has been seared, add your chopped peppers and your garlic, and sauté your veggies with your chicken.

As your peppers begin to soften, add your tomatoes, parsley, and basil. Once everything has cooked down, remove your vegetable medley from the heat and set it aside so it can cool.

Spread half of your tomato coulis over the portobello mushroom, then add your chicken and vegetable mixture to your portobello mushroom pizza.

Take your dish and place it back in the oven for an additional 10 minutes.

Once you've taken your dish is out of the oven, drizzle the last of your tomato coulis and your portobello mushroom pizza is done.
