7 Oz Pork tenderloin
1 Cup Italian eggplant, diced and sautéed
1 Cup King oyster mushrooms, sliced in two
1/2 Cup Tomato sauce
1 Tsp Chives
1/4 Tsp Grape seed oil
In a hot non-stick pan, add oil and pork; let sear. Now, add mushrooms; let cook for five minutes.
Lastly, add eggplant, tomato juice and chives.
