INGREDIENTS

5 Oz Ground beef, lean
1 Egg
2 Egg whites
1 Cup Zucchini, diced
1/4 Cup Mixed bell peppers, diced
1/4 Cup Mushrooms, diced
1/4 Cup Green onions, chopped
1/4 Cup Tomato coulis
1 Garlic clove, minced

DIRECTIONS

Preheat oven to 375ºF

In a pan, add beef; let cook and sprinkle with sea salt and pepper.

While the beef is cooking, mix together the two egg whites with whole egg.

When beef is half way cooked, add peppers, zucchini and green onions; let cook.

Then mix in mushrooms and add garlic.

Now, turn off heat and pour in egg mix.

In the center of the pan, add vegetable coulis.

Lastly, place in the oven on broil for 3-5 minutes or until eggs are fully cooked
