Ready to experience a whole new omelette? Topped with delicious vegetables and cooked using both the stove top and the oven, our pizza omelette will be sure to add a new twist to your taste buds!
1/2 Cup Mushrooms, chopped
1/2 Cup Red bell peppers, diced
1/2 Cup Tomatoes, diced
4 Eggs, beaten
4 Tbsp Tomato coulis
1/2 Cup Green onions, chopped
1/4 Tsp Fresh basil, chopped
1/4 Tsp Parsley, chopped
1/4 Tsp Oregano, chopped
1/2 Tsp Grape seed oil, divided
Preheat oven to broil.
In a hot non-stick pan with 1/4 tsp grape seed oil, add mushrooms and bell peppers; let cook.
Now, add tomatoes but only for a couple of seconds; set aside.
In the same hot non-stick pan, add another ¼ tsp grape seed oil and pour in beaten eggs; make a flat omelette. Once the egg is well cooked and resembles a crust, set on a baking sheet and pour tomato coulis
(cold) on top; spread evenly. Sprinkle cooked vegetable toppings on the egg crust and top with green onions, basil, parsley and oregano.
Finally, place in the oven on broil for approximately 3 minutes.
