Delicious mustard-glazed salmon served on a bed of kale and tomatoes!

The sweet mustard glaze in this recipe proves that you don’t need complicated tastes to make a dish memorable. Fork-tender salmon pairs beautifully with kale and juicy cherry tomatoes to make this dish truly unforgettable!

INGREDIENTS

4 Fresh salmon, Fillets
2 Cup Cherry tomatoes
2 Tbsp Olive oil
4 Cups Kale leaves, Chopped
2 Tbsp Fresh parsley, Chopped
Sea salt & pepper

Dressing - Sweet mustard glaze

2 Tbsp yellow mustard,
1 Tbsp Dijon mustard,
1 Tbsp Sugar substitute,
1 Tbsp Soy sauce, Low sodium
1 Tsp Red hot sauce, Optional

DIRECTIONS

Mix your mustard sauce together, using yellow and Dijon mustards, soy sauce, and hot sauce.

Preheat oven to 400°F and lightly oil or spray a baking sheet. In a small bowl, whisk together mustard, sugar substitute, soy sauce, and hot sauce.

Layer a bed of kale and tomatoes on the baking sheet. Drizzle with olive oil and season with salt and pepper, and add the salmon on top.
Brush the salmon fillets with your mustard mixture before baking.

Brush each fillet with your mustard mixture.
Bake the salmon until fork tender, or for about 20 minutes, and garnish with parsley before serving.

Place into oven and cook until the fish flakes easily with a fork, or for about 20 minutes. Garnish with parsley before serving.
