The sweet mustard glaze in this recipe proves that you don’t need complicated tastes to make a dish memorable. 4 Fresh salmon, Fillets
2 Cup Cherry tomatoes
2 Tbsp Olive oil
4 Cups Kale leaves, Chopped
2 Tbsp Fresh parsley, Chopped
Sea salt & pepper

Dressing - Sweet mustard glaze

2 Tbsp yellow mustard
1 Tbsp Dijon mustard
1 Tbsp Sugar substitute
1 Tbsp Soy sauce, Low sodium
1 Tsp Red hot sauce, Optional

Start by lightly oiling a baking sheet and preheating your oven to 400°F. Whisk together mustard, soy sauce, hot sauce, and sugar substitute in a small bowl.

Add an even layer of kale and tomatoes to the baking sheet then drizzle olive oil on top. Season with salt, and pepper then top with salmon.

Coat each salmon fillet with the mustard glaze.

Bake in oven for approximately 20 minutes or until salmon can flake easily with a fork. When ready to serve, garnish with fresh parsley.
