No-Bake Peanut Butter Energy Bars are a tasty on-the-go snack!

Everyone has those mornings where they’ve had to rush out of the house to get somewhere on time, missing breakfast in the process. We get it, it’s hard to wake up early! Breakfast is still an important meal in the day, though, as it helps keeps your energy levels up. By grabbing breakfast, you’re less likely to overeat later in the day or snack on unhealthy food, too. You can easily grab our healthy No-Bake Peanut Butter Energy Bars on the way out of the house! These energy bars make a great on-the-go breakfast or snack, and the best part? They last up to a week in the refrigerator!

1 Cup oatmeal, dry
2/3 Cup coconut flakes, toasted, unsweetened
1/2 Cup Peanut butter
1/2 Cup flaxseed, ground
1/3 Cup Honey
1/4 Cup Cocoa powder, unsweetened
1 Tbsp chia seeds, (optional)
1 Tsp Vanila extract

Grind the flaxseed in a grinder.

Add all ingredients in a medium bowl.

Stir all ingredients together until thoroughly mixed.

Scoop the mixture into a standard size loaf pan or high-sided plate. Chill in the refrigerator for at least half an hour. This will make it easier to handle and mold.

Once chilled, cut into rectangular bars. Store in an airtight container and keep refrigerated for up to 1 week.
