No-Bake Peanut Butter Energy Bars are a tasty on-the-go snack!

Everyone has those mornings where they’ve had to rush out of the house to get somewhere on time, missing breakfast in the process. We get it, it’s hard to wake up early! Breakfast is still an important meal in the day, though, as it helps keeps your energy levels up. By grabbing breakfast, you’re less likely to overeat later in the day or snack on unhealthy food, too. You can easily grab our healthy No-Bake Peanut Butter Energy Bars on the way out of the house! These energy bars make a great on-the-go breakfast or snack, and the best part? They last up to a week in the refrigerator!

INGREDIENTS

1 Cup oatmeal, dry
2/3 Cup coconut flakes, toasted, unsweetened
1/2 Cup Peanut butter
1/2 Cup flaxseed, ground
1/3 Cup Honey
1/4 Cup Cocoa powder, unsweetened
1 Tbsp chia seeds, (optional)
1 Tsp Vanila extract

DIRECTIONS

Grind the flaxseed.

In a medium-sized bowl, add all ingredients.

Stir ingredients together.

Scoop mixture into a standard size loaf pan or a high-sided plate. Let the mixture cool in the refrigerator for at least half an hour.

Cut into rectangular bars. Keep refrigerated for up to 1 week in an air tight container.
