These energy bars make a great on-the-go breakfast or snack, and the best part? They last up to a week in the refrigerator!

2/3 Cup coconut flakes, toasted, unsweetened
1/2 Cup Peanut butter
1/2 Cup flaxseed, ground
1/3 Cup Honey
1/4 Cup Cocoa powder, unsweetened
1 Tbsp chia seeds, (optional)
1 Tsp Vanila extract
