Natalie’s Zucchini Pasta & Scallops Recipe
Healthier pasta recipes are a great alternative to carb-heavy meals!
If you want to go low-carb but just can’t bring yourself to give up pasta, then easy pasta recipes are the answer! Swap the noodles for spaghetti-style zucchini, and this easy recipe gets even easier. Cooking zucchini pasta and scallops recipes like this one are a great way to get a try tonight for a delicious, nutritious meal.
Heat up a non-stick pan with olive oil and add your scallops. Let them cook for approximately 1 to 2 minutes, or until they're just about done. Keep an eye on them, as it's very easy to overcook scallops. Once they're just barely cooked, immediately take them off the heat and set aside in a cool dish.
In the same non-stick pan, add pureed garlic and spaghetti-style zucchini.
Add in your sliced peppers and sauté the contents of the pan, allowing them to cook for approximately 4 to 5 minutes, or until cooked through.
Now you're ready to add your scallops back into the pan, mixing them in with the zucchini and peppers. Drizzle with lemon juice to finish.
Ready to serve!
