India-inspired spicy vegetables!

INGREDIENTS

1/4 Tsp Garlic, minced
1/4 Tsp Ginger, minced
1/2 Tsp Grape seed oil
1/2 Cup Tomatoes, diced
1 Tsp Coriander
1 Bag Spinach, fresh or frozen
1 Egg, poached

DIRECTIONS

Start by poaching your egg in a pan with boiling water.

Once your egg is poached, set it aside and start cooking your spicy vegetables.

Place a non-stick pan with grape seed oil over medium/medium-high heat.

Add your garlic and ginger to the pan and sauté until they begin to soften.

Now, add tomatoes and coriander and continue cooking.

Finally, add your spinach.

Remove your pan from the heat once the spinach has wilted.

Ready to serve!
