Combining fresh pico de gallo with poultry and vegetables, this low-carb chicken salad recipe is a great way to kick up standard leafy greens. This recipe delivers on great taste without packing on the carbs. Try this easy chicken salad recipe and see for yourself!


7 Oz Chicken, thinly sliced
1 1/2 Cup Spinach
1/2 Cup Pico de gallo
2 Tbsp Balsamic dressing, low fat low carb

Heat up a non-stick pan and add in the thinly sliced chicken, letting it cook.

Once the chicken is almost fully cooked, add in the balsamic dressing, and immediately remove the pan from heat. The chicken will easily finish in the pan, but you want to hold onto as much dressing as you can.

When it's time to plate, start with a bed of spinach, add the chicken with dressing to the top of the greens, and top with fresh pico de gallo.
