INGREDIENTS

1 1/2 Cup Mushrooms, sliced
1/2 Cup Water
1/2 Cup Chicken stock
2 Tbsp Miso paste
1/2 Cup Dried seaweed
7 Oz Tofu, firm (0 carbs) finely diced
1/2 Cup Green onions, chopped

DIRECTIONS

Heat up a non-stick pan over medium heat.

Add your mushrooms and let them sear.

Next add your water, chicken stock, and miso paste.

Mix the paste into the water as its heating to eliminate any lumps.

As soon as the soup starts to reach a boil, add the dried seaweed and tofu.

Let it cook for a few minutes.

Finally, add the green onions.

Ready to serve!
