INGREDIENTS

3 Eggs
1 Green onion
1 Jalapeno, finely chopped
1 Tomato, finely chopped
2 Oz Mozzarella cheese
1 Tbsp Grape seed oil
salt and black pepper, to taste

DIRECTIONS

Add grape seed oil to a frying pan on medium heat. Once hot, fry finely chopped scallions, jalapeños, and tomatoes for 3 minutes.

Beat eggs separately, then pour mixture into the pan and scramble for 2 minutes.
