With cherry tomatoes and fresh basil, this Mediterranean-style pork cutlet recipe will make your mouth water.
7 Oz Pork loin
1 Cup Vegetable stew, (ratatouille style), cooked
1 Cup Cherry tomatoes, blanched & skinless
1 Tbsp Fresh basil
1 Tbsp Capers
1/4 Tsp Grape seed oil
Before cooking the pork, add some sea salt and pepper.
In a hot non-stick pan, add oil and pork; let sear for a couple of minutes.
Now, add vegetable stew
, tomatoes, capers and sea salt (on the vegetables).
When everything is cooked, add the fresh basil.
