Heat up a non-stick pan and add your chicken, searing and cooking it. A ceramic pan will handle the temperature quite well and keep the food from sticking.
Slice an uncooked eggplant finely and add the slices to the cooking chicken. Toss occasionally to make sure everything cooks evenly.
Once the chicken is well seared, toss in the green onions, roasted eggplant, and diced tomatoes. The tomatoes will add a lot of liquid to the recipe, so allow some of it to cook off, and mix in your mustard.
Mix in the capers, and at this point add 3 ounces of water - but if you find the mixture is too wet, you can leave it out, depending on your preference.
Let all the ingredients cook together for approximately three minutes. Once it's cooked, plate the vegetable mixture and top with the chicken.
