Marinated Chicken with Lemon & Vegetables Recipe

7 Oz Chicken, marinated with lemon, basil, cilantro and mint
1 Cup Cherry tomatoes, confit
1/2 Cup Endive, braised with chicken stock
1/2 Cup Green onion, chopped
1 Jamaican pepper
1 Tsp Espelette pepper
1 Tsp Lime zest
1/4 Tsp Grape seed oil
About twenty minutes before you start cooking, marinate the sliced chicken with lemon juice, fresh cilantro, fresh basil, and fresh mint. Twenty minutes is just enough time for the acidity in the marinate to help start the cooking process.
When it's time to start cooking, heat up a non-stick pan with grape seed oil and add the marinated chicken.
Next, add in the braised endives. They won't need to do much more than reheat, so be sure not to overcook them.
Place the cherry tomatoes confit into the pan and allow them to sear. Zest a lime and mix it in with the other ingredients.
Finally, toss in the green onions and mix in the Espelette pepper once the chicken is fully cooked.
Ready to serve!
