This Thai stir fry recipe is guaranteed to spice things up!

1/2 Cup Green peppers, diced
1/2 Cup Cherry tomatoes, halved
1 Cup Eggplant, diced
7 Oz Chicken, thinly sliced
1 Tbsp Maple flavoured syrup, low fat, low carb
1 Thai pepper, whole (optional)
1 Cilantro, chopped

Heat up a non-stick pan and toss in diced eggplant and halved cherry tomatoes, seasoning with sea salt and pepper to taste.

Next, add in your thinly sliced chicken, allowing it to sear evenly.

Once the chicken has been seared, pour in your half cup of diced peppers and add your maple syrup.

Allow the pan to come to a simmer for approximately two to three minutes.

Add the Thai pepper to the pan, stirring it in to incorporate the flavor. Depending on how much heat you like, you can add more or even substitute a milder pepper - the choice is yours!

Finally, top with fresh cilantro when you plate.
