Mango-Kiwi Salsa with Pork Tenderloins

Combine mangoes, kiwis, vinegar, ginger, and cilantro in a medium-sized bowl. Cover and refrigerate the salsa for 4 hours if not using right away.
Set the grill to medium heat. You’ll be grilling directly over the heat with the grill cover closed. Meanwhile, tenderize your pork on a flat surface for about a minute.
Cut each pork tenderloin about halfway, lengthwise. Make sure that you do not cut all the way through. Open the tenderloin and spread it flat. Place each slice between 2 sheets of plastic wrap. Using a meat mallet or rolling pin, pound the slices to 1/4-inch thickness and cut each into 4 pieces. Add salt, cumin, coriander, cinnamon, and ginger on each side of the tenderloin pieces.
Place the tenderloin on the grill. Cook for 5 to 6 minutes, turning it over once. Check to make sure the color of the tenderloin is a light brown. There shouldn't be any pink showing.
Top the tenderloin with the mango salsa.
