Start your morning off with our yummy Low-fat Frittata with Jicama dish for breakfast!

Spice up today’s breakfast with our Low-fat Frittata with Jicama recipe that’s loaded with vegetables! Unlike an omelette, a frittata has fillings mixed in with eggs. These fillings can be vegetables, cheese or meat! However, in this gluten-free recipe, we decided to use vegetables such as zucchini noodles, celery root, and bell pepper to help you stick to your weight-loss goals. Also, this dish gives you the perfect opportunity to put any leftover sautéd vegetables to use from the night before!



6 Eggs
1 Cup Jicama, Cut in strips
1 Cup Bell pepper, Cut into rings
1 Cup Celery root, Diced
1 Cup Zucchini Noodles
1 Jalapeno pepper, Chopped
1 Tbsp Olive oil
Sea salt & pepper, To taste
Cilantro, Topping

Heat your non-stick pan over medium-high heat. Whisk your 6 eggs.

Once the pan is hot, splash your olive oil and sauté your vegetables (red bell peppers, zucchini noodles, jicama, celery roots) for a few minutes.

Add you eggs and reduce heat to medium.

Let it cook for a few minutes then add jalapeno peppers with a dash of salt and pepper to taste.

Top it with Cilantro.
