This low-carb soup will keep you coming back for more!

Making use of fantastic fragrant ingredients, this pho soup is sure to impress! It’s not often we get to use star anise and cinnamon in a recipe, so making this was a treat. INGREDIENTS

1 Tsp Grape seed oil
3 Garlic cloves, chopped
1 1/2 Ginger, chopped
2 star anise pods
1 Cinnamon Stick
4 Cups Beef broth
1 Tsp Kosher Salt
1/2 Tsp Pepper
2 Zucchini, spiralized
1/2 Cup Bean sprout
12 Oz Ground sirloin, thinly sliced

Topping

Fresh basil leaves, to taste
Fresh mint, to taste
Fresh cilantro, to taste
Lime slice, to taste
French green onion, chopped
Sriracha, to taste

DIRECTIONS

In a small saucepan, heat olive oil over medium then add ginger and garlic and sauté until garlic is golden.

Add all spices to pan and sauté until mixture is fragrant.

Turn down burner to medium-low and slowly add beef broth to pan. Add cinnamon stick then cover pan and let simmer for about 20 minutes.

The ginger, garlic, and spices should float to the top of the pan, remove these with a spoon.

Place ½ of the zucchini noodles and bean sprouts into each bowl. Add beef slices to bowls then carefully pour beef broth over zucchini noodles.

Squirt with lime to taste and add toppings.
