Zucchinis are a very low-calorie vegetable as they provide only around 17 calories per 100 gram serving! Gold-skinned zucchinis, such as yellow zuchinnis, offer a lot of additional nutrients such as antioxidants which can reduce signs of aging and the risk of various diseases. We’ve used yellow zucchinis in our pork stew recipe, but you can substitute with any zucchini you like!
