We’re big fans of Zucchini Noodle recipes (sometimes we tend to call them ‘zoodles’), and this Lemon Garlic Zucchini Noodles recipe is yet another low-fat, low-carb pasta alternative.

INGREDIENTS

4 Zucchini
2 Tbsp Grape seed oil
2 Garlic cloves, Minced
1/2 Cup Cherry tomatoes, Halved
1 Tbsp Fresh lemon juice
Sea salt, To taste

DIRECTIONS

Prep and make zucchini noodles

Spiralize your zucchini to make noodles.

Over medium heat, heat oil in a pan and add garlic. Cook for approximately 1 minute then add zucchini noodles. Cook for approximately 5-20 minutes (depending on desired texture) and stir occasionally.

Garnish with parsley, cherry tomatoes, and fresh lemon juice.
